EVA Air Award-Winning Lychee and Strawberry Bread

Since January 1 this year, EVA Air has teamed up with Wang Peng-chieh to bring the amazing taste of the master baker’s Lychee and Strawberry Bread to Royal Laurel Class passengers on long-haul flights departing from Taiwan.
Champion Lychee and Strawberry Bread received the highest score at the Masters de la Boulangerie competition in 2018 and won the Monde Selection Gold Award in 2019. Moreover, at the Bakery World Cup held once every four years, Wang became one of only nine Masters de la Boulangerie in the world today. He has always used local ingredients in his products and strives to promote Taiwan’s nascent breadmaking culture.
For Wang, showcasing Taiwan’s local ingredients on the international stage using traditional European bread-making techniques is the baker’s greatest mission. “European bread allows people to taste the natural ingredients. Chew slowly and you can taste the pure flavor of wheat,” he said.
From his studies to participating in world competitions to starting his own business, he always incorporates Taiwan's agricultural products into his bread. “Taiwanese farms produce many kinds of high-quality vegetables and fruits, and they go very well together,” Wang noted.
“When you compete on the international stage, skill is a fundamental requirement; what impresses everyone is actually the wonderful flavor created by these natural ingredients,” he said.
Wang works closely with the farmers that supply his ingredients, discussing with them the best ways to incorporate the unique flavors into his bread. He also takes samples of his bread to the farmers and asks for their feedback.
For the Lychee and Strawberry Bread served aboard EVA Air flights, Wang uses special sourdough proven for 18 hours, resulting in a perfectly chewy and moist texture. He also adds carefully selected local ingredients from Taiwan, including dried strawberries and raspberries, as well as walnuts soaked in lychee liqueur, to create a delicately sweet, fruity, and crisp flavor.
